FOREST CREAM SOUP
Ingredients
2 zucchini,3 potatoes,2 carrots,5 champignon mushrooms,a handful of chickpeas(pre-cooked),veggie or cube broth,onion,parsley,olive oil,salt,pepper.Bread crostini and parmesan are optional.
Preparation
Directions: chop the onion and make it sauté in oil with the parsley, slice all the vegetables and add them with the mushrooms and the chickpeas. Add the broth and cook until the carrots soften. Put salt and pepper and then make a cream with a blender. Serve with grated parmesan and bread crostini.
