A POTFUL OF VEGGIES

Ingredients

1 pepper, 3 carrots, 3 potatoes, 4 courgettes, 1 aubergine, a handful of frozen peas, tomato sauce, salt, pepper, olive oil.

Preparation

Directions: peel the aubergine and cut it into small pieces, cut all the other vegetables. Put oil in a oven dish, add all the veggies, cook for some minutes then add tomato sauce and a glass of water. Add salt,pepper and cook for 20 minutes until the carrots are soft.

Preparation time: 10 minutes

Cooking time: 20 minutes
