TUSCAN BREAD SOUP

Ingredients

4 carrots,celery,5 courgettes,150gr of frozen peas,250 of beans,onion,parsley,half of a cabbage,2 potatoes,hard bread

Preparation

Directions:put the beans to soak for 12 hours.Boil them and mash them in the masher with their cooking water.Chop the onion,parsley,carrots and celery,put in plenty oil ,make it sauté and add all the sliced vegetables and beans.Cook until the vegetables are soft.In the meanwhile cut the bread into thin slices.Then in a big bowl put a layer of bread,then the vegetables and make more layers like this using the cooking fluid(the bread will absorb it).Wait some hours before eating so to make the bread absorb the fluid.

Preparation time: 12 hours soaking time plus 2 hours cooking time
