PUMPKIN SOUP
Ingredients
300gr of pumpkin ,2 potatoes, half an onion, veggie broth, parsley, oil, salt.
Preparation
Directions: chop the onion and make it sauté in oil, add the sliced pumpkin and potatoes and then the broth. Cook until the vegetables are soft. Make a cream with a blender, add parsley, olive oil, grated parmesan and bread crostini.
