CREPES WITH SPINACH AND RICOTTA CHEESE

Ingredients

Make the batter with 100gr of flour, 3 eggs, a pinch of salt, 2 glasses of milk. For the stuffing you need 450 gr of frozen spinach, 250gr of ricotta cheese,a pinch of salt. Make the béchamel with 50gr of flour, 50gr of butter, half a litre of milk,parmesan.

Preparation

Prepare the batter and let it rest for an hour. Prepare the stuffing: boil the spinach,squeeze them, chop them and mix with the ricotta cheese. Cook the crepes(as shown above). Prepare the béchamel: melt the butter in a small saucepan,add flour and milk. The béchamel mustn’t be lumpy!You may continue stirring with a wooden spoon until ready (when you see bubbles on the surface). Now you can stuff the crepes:put 2 tea spoons of the mixture on the crepes, roll them, prepare an oven dish with a layer of béchamel and lay the crepes on it,then cover with another layer of béchamel.Add grated parmesan and cook in oven at 180° for 20 minutes.

Cooking time: 1 hour rest for the batter plus 50min total.
