VEGGIE SOUP

Ingredients

parsley,onion, 1 celery,2 carrots,250gr of peas(frozen),3 courgettes,200gr of green beans,1/2 cabbage,500gr of potatoes,2 red tomatoes.

Preparation

Directions:put oil in a pot,add chopped celery,onion and parsley,make it sauté and then add all the vegetables cut in small pieces.Add a stock-cube and cook until the carrots are soft.Serve with toasted or fried bread crostini and grated parmesan.If you like you can make a cream using a masher.

Preparation time: 10 minutes

Cooking time: 30/40 minutes
