ASPARAGUS SOUP

Ingredients

a bunch of asparagus,2 potatoes, half an onion, veggie broth, parsley, oil, salt.

Preparation

Directions: chop the onion and make it sauté in oil, add the sliced asparagus and potatoes and then the broth. Cook until the vegetables are soft. Make a cream with a blender. Add parsley, olive oil, grated parmesan and bread crostini.

Preparation time: 10 minutes

Cooking time: 30 minutes
