BEANS' SOUP
Ingredients
,garlic,rosemary,tomato sauce and short pasta like “ditali”.
Preparation
Directions:put the beans in a big bowl with water and leave them to soak for 12 hours.After that ,drip and cook in a pot with water for 1hour and a half on a low heat.While cooking take off the foam that they’ll form.When cold,blend them so to make a cream.In the meanwhile put oil,garlic and rosemary in a pot and make it sauté,then take off both garlic and rosemary.Add the beans’ cream,add some cooking water,tomato sauce,salt and pepper.When boiling add pasta and cook.Serve with a drizzle of olive oil and small pieces of toasted bread(optional).
Preparation time: 12 hours soaking time plus 2 hours cooking time.
