SCHIACCIATA WITH BLACK OLIVES
Ingredients
to make 4 big schiacciate: 800gr of flour. 25gr of brewer’s yeast, 2 glasses of water, a glass of milk, 3 spoons of oil, a spoon of sugar, a pinch of salt, 20 black pitted olives.
Preparation
melt the yeast in warm water, add milk, oil, sugar, salt and flour. Add the flour slowly until it becomes a soft and not sticky dough. Make a ball, notch a cross on it, it makes leavening easier, leave it in a warm place covered with a cloth. After an hour the volume will have doubled.Add the olives, chopped, to the dough, roll it on an oiled baking pan with your hands, make it half a cm thick. Brush it with oil and add salt, cook in hot oven at 250° until it becomes golden. Cut into small pieces and serve as appetizers.
Preparation time: 30/40min plus leavening time.
