SALMON MOUSSE

Ingredients

250 gr of smoked salmon, 1/2 liter of whipping cream, 3 sheets of fish glue(or jelly), a spoon of mayonnaise.

Preparation

whip the cream with the blender,blend the salmon with the mayonnaise and some lemon juice.Put the fish glue into water and when they melt,squeeze them and add to salmon,mixing well.Cover a bowl with some film,add the mixture,beat the bowl against the table to make it compact,then put into fridge for 2 hours.When ready to serve turn it out on a plate and serve with toasted crostini spred with butter.

Preparation time: 15min. plus 2 hours in the fridge
